fried food is very yummy!!! and people down south have the best fried food!!! grease is bad and very fattening it clogs up arteries!!! a good substitute for cooking oil is to look for those made from vegetables. palm oil for example has lower fat content than animal fat or grease. there's also canola oil which is very common. olive oil though the healthiest is quite expensive and is not ideal for frying as it burns very easily in very high temperatures.
